My favorite way to use zucchini continues to be making breads and muffins with them. A zucchini fritter is wonderful, but a soft, warm muffin with a little sugar sprinkled on top is so much better.
That’s where these sourdough discard zucchini muffins come in. This recipe is inspired by my sourdough discard zucchini bread, but I made a few tweaks to turn it into an easy, grab-and-go option.
